Join Lisa He of Borderlands Bakery for a festive morning making this gorgeous Madeline Christmas Tree- perfect for your holiday table centerpiece!

In this hands-on class, you'll learn to make a batch of Madeleines* in your choice of flavors and decorate them with beautiful Callebaut Chocolate. Lisa will then show you how to build your tree and of create all the edible decorations. You'll also learn the art of tempering and coloring chocolate for perfect results every time!

We use only the finest Belgian Chocolate (Callebaut) and other ingredients to make these delightful treats. During class you'll enjoy a taste of Lisa’s Madeleines covered in chocolaty goodness and take home all the treats you make to share with your friends and family!

*Lisa will have a batch of her Vanilla Bean Madeleines made already for each station so you can choose whichever flavor you’d like for the batch you make.

Angela’s kicking off the holiday season with flair (and a little bit o’ booze!) You’ll create THREE festive recipes - perfect for gift giving (or not, we won’t judge!) Come learn to make:

  • Warm Whiskey* Caramel Sauce

*Booze is optional, but highly recommended! You can choose between Spiced Rum, Brandy or Jameson Irish Whiskey (or any of the myriad of other liquors on Angela’s Booze shelves!)

Perfectly spiced Homemade Eggnog is so versatile to make, you’ll likely never buy the store bought stuff again. You’ll make a full batch of Eggnog and use a little to make the Eggnog Custard to create your luscious Brioche Eggnog Bread Pudding the perfect make ahead recipe to round out a holiday meal or the star of a frosty* winter morning brunch when you have a house full of guests! Choose from Chocolate Chips, Pecans, or tart Cranberries (or any combination you like) to fill your pudding- or go au natural and leave the eggnog flavor to shine all by itself. During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! In this class Keri will teach you how to make a tender pierogi dough while that’s resting you’ll work on your fillings for sweet you’ll make a jammy blueberry filling and for the savory you’ll make a Classic Cheesy, Creamy Potato & Green Onion Filling served with an Onion Butter Sauce. After the dough has rested Keri will teach you all her tips and tricks on rolling out the dough and stuffing/sealing to make the perfect pierogies. Keri will then show you how to cook them and what to serve them with for a complete meal. Plus, Keri will demonstrate how easy it is to create homemade whipped farmer’s cheese to accompany your sweet pierogies.

Okay, so it may not be the prettiest cake, but it certainly lives up to its name! Most Norwegians refer to Kvæfjord cake (Kvæfjordkake) as simply ‘verdens beste’, or the world’s best cake- in 2002 they even voted it as the national cake of Norway.

Comprised of EIGHT* layers of deliciousness- in this class you’ll make:

  • Norwegian Sponge Cake*

  • Topped with Delicious Meringue and sliced Almonds (or not- the choice is yours)

  • Lucious Vanilla Bean Diplomat Créme (Crème Pâtissière folded into light Chantilly Cream)

  • Homemade Raspberry Conserve

  • and filled with fresh fruit!

Kvæfjord is one of the most beautiful parts of Norway, nestled between the stunning Vesterålen islands and the town of Harstad. Kvæfjordkake got its name from the two sisters from Kvæfjord who first made this cake at Café Alliance in Harstad in the 1930s.

Although it may sound like a bit of a boast, the entire FAB team agrees…even Sebastian!

*The original Verdens Beste is a meringue topped Norwegian sponge cake filled with a velvety vanilla cream. However, Angela had some fresh raspberries on hand and had just made a delicious homemade Raspberry Conserve, so… it just needed to be done. Of course, you can do the original five layer version if you prefer, but really, why would you want to?

You have the choice of making one large round cake or the sheet pan version which can easily be divided into two (perfect for Dynamic Duos.)

Join Rory McEllin for an entertaining evening making Cornish Pasties. You’ll start by making your flaky pastry dough and while that’s chilling, you’ll prepare your fillings. Plus, you’ll receive alternative recipes to try at home!

Your will cut up your beef to the correct size and season, then Rory will have you chopping like a pro as you prepare the remaining ingredients for your filling.

Once they’re all prepared Rory will show you how to roll, fill and shape your pasties ready for baking or freezing. He may even break out our Amish pie maker if you want to make some mini pasties- perfect for little hands!

A private event for a fun evening making (and eating!) sweet and savory mini pies. You'll start by making your sweet filling (your choice of apple or cherry...with a myriad of other add ins like nuts, booze soaked dried fruit, marzipan...the list goes on!) and while that's cooling you'll make Rory's oh so versatile pie dough. As your dough rests, you'll make your savory filling (again, your choice of Chicken Pot Pie or Vegetable Pot Pie.) Finally, you'll learn the secrets to successfully creating a selection of double crust mini pies with lids that don't shrink! During the class we'll bake off a couple of your pies for dinner (and dessert) and you'll take all the rest home with you- ready to freeze and bake whenever the mood takes you. This is a great introduction to easy meal prep and the recipes are so flexible you can experiment and customize every batch you make at home!

When Suzy Fleming Leonard was a child, she knew she was in for a treat when her mother pulled out her mixing bowl, rolling pin and a pound of breakfast sausage. Within the hour, a pan of satisfying sausage rolls would come out of the oven.

The savory sausage with just a hint of spice, wrapped in flaky biscuit dough and drizzled with maple syrup was ideal for a leisurely breakfast.

The class will start with turning ground pork (or turkey) into breakfast sausage flavored to suit your taste — spicy, mild or sweet. Next, make the flaky biscuit dough, fill it and roll it with the sausage into two dozen savory sausage rolls. (They freeze beautifully.) While the sausage rolls bake, whip together a hearty frittata enriched with creamy ricotta and mozzarella. Add a side of fresh fruit for a Southern Brunch that’s perfect for warming a chilly January day.

As with all our Brunch Classes, we’ll have Mimosas, Fresh Fruit and Orange Juice to accompany your feast.

Vieni con noi (Come along) to a fun filled day making all things Italian with Keri Cossette!

Bread : Ciabatta Rolls 

  • Lunch: Minestrone Soup with Semolina Pastina 

  • Pastas:

    • Baked Gnuderi with Tomato Sauce

    • Hand Cut Noodles with Classic Cacio Pepe Sauce 

  • Dessert: Panna Cotta with Fresh Berry Coulis and Almond Cookie Crunch 

We will start off the day making our Panna Cotta and Fresh Berry Coulis (almond cookie crunch will be provided but recipe will be given) then students will make Ciabatta dough for rolls. Once the bread dough is made we’ll will begin work on our lunch- making Semolina Pasta Dough (to be used twice during class once for lunch and again later for hand cut noodles) while the dough is resting they will begin chopping veggies and preparing the Minestrone Soup. While the soup is simmering on the stove they will shape the pasta for minestrone. After lunch is eaten they will shape ciabatta rolls and second proof. Then students will begin working on Baked Ricotta Gnuderi making the dough and sauce and assembling to be baked later at home or frozen for another time. Finally ciabatta will be baked and you’ll finish by rolling and hand cutting noodles and learning how to assemble the classic Cacio Pepe Sauce.

Join Mary Storey for an enchanting morning recreating the world’s most famous cake, the Classic Austrian Sacher-Torte,

  • the distinctive Sacher Piping and Edible Gold Leaf

The cake itself is the consequence of several lucky twists of fate. The first was in 1832, when the Austrian State Chancellor, Prince Klemens Wenzel von Metternich, tasked his kitchen staff with concocting an extraordinary dessert to impress his special guests. As fortune had it, the chef had fallen ill that evening, leaving the apprentice chef, the then-16-year-old Franz Sacher, to perform this culinary magic trick. Metternich’s parting words to the talented teenager: “I hope you won’t disgrace me tonight.”

Franz Sacher seized the moment and conjured up the confection of a lifetime, the chocolate cake that would go down in history as the ne plus ultra of desserts: the Original Sacher-Torte. Disgrace, in any case, was not on the menu that evening. The cake soon gained a cult following, and was deemed “presentable at court”. From then on, it was a favorite at the imperial court and soon went on to win the hearts (and palates) of the world.

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.

We’ll start the morning creating the stunning, tender Sourdough Marble Rye (with or without caraway seeds) in your choice of designs (Traditional Marble or Zebra Marble) with a batch of dough that’s been prepared for you.

Details: This 3 day workshop with Fred Csibi-Levin AKA Doc Macaron focuses on learning and applying basic French pastry training, while making modern and elegant desserts. The workshop will contain a combination of elements: hands on, demonstration* and presentations (for those that like to learn the science behind the recipes.)

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! This course is suited to bakers/decorators wishing to improve their modeling, carving and sugar-craft skills.

Course Aims: Learn the skills needed to professionally carve, cover and embellish realistic looking 3D cakes using different techniques of buttercream, ganache, fondant, modeling chocolate, sugar florist paste, isomalt, chocolate leather and modelling paste. Skills you will learn include:

  • Stacking, Carving and Shaping cakes to create 3D cakes

  • Scaling components from images to create correctly proportioned elements (and reusable templates)

  • Creating and using:

    • Handmade Fondant

    • Chocolate Modelling Fondant

    • Modelling Chocolate

    • Chocolate Leather

    • Modeling Paste

    • Edible Mixed Media Paper

    • Edible Moss Cake

  • Tempering and casting chocolate

  • Using an airbrush to color and highlight your designs

  • Using various carving tools and the Zeoto Pen Heat Decorating Tool to carve elements including the chocolate egg

  • Using texture mats, tools and hand modelling to create realistic textures

  • Creating custom modelling tools for this and future projects

  • Creating stable structures, dowling, stacking and packaging for successful transportation

  • Safely using LED lights to enhance design elements

  • Pulling design elements together successfully including dusting, painting, and coloring;

  • Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for your course project)

**If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.

Balance of course fee is due four weeks (March 6th, 2025) before class commences to allow time for materials to be ordered. You will be notified 6 weeks in advance or when all eight spots (we require a minimum of 5 students) are reserved, whichever comes first to confirm booking. Please note: This is a LARGE cake- the board is 20” square, the cake at its highest point is 16” and it weighs over 50lbs/23Kilos, so may be difficult (but not impossible) to transport back if you are flying.

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!

Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Course dates will be confirmed 6 weeks in advance or when all students have enrolled. Due to the intense nature of this course, we are limiting space to only 6 students to ensure each student receives individual, hands-on attention. A project outline questionnaire will be sent out for completion and return prior to course starting.

Discover your creative flair and learn a variety of skills to take your baking and decorating to the next level. Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.

Are there specific requirements for joining?

This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills.

Course Aims

Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and cake truffles using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:

  • Baking success principles including weighing, measuring, scaling, converting and costing recipes

  • How to bake, level, torte, dam, fill and cover a sponge cake

  • Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)

  • Using roll out and paneling methods for covering regular and double barrel cakes to obtain sharp edges and cover with fondant

  • Creating Cake Lace from scratch, using commercial mixes and alternative methods

  • Dowling, stacking and packaging for successful transportation

  • Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes

  • Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;

  • Pulling design elements together successfully including dusting, painting, and coloring;

  • Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)

  • Marketing, advertising, and finding the right clients

  • Costing, pricing, and profitability- how to get paid what you deserve!

For the wreaths you’ll learn to pipe perfect circles to form your wreaths and you’ll take home a selection of adorable Italian Macarons in a selection of flavors to share with your family and friends. Join Mary Storey for a wonderful evening making Traditional* Panettone! During the class you will learn to fill, shape and bake a batch of pre-risen dough (so you’re not waiting around for hours.) While your panettone is baking you’ll learn to make a batch of dough to bring home so you can make more delicious Panettone to share with your friends and family! Plus, Mary will have a surprise Panettone dessert made for you to sample (don’t worry, she’ll share the recipe too) in addition to serving her freshly baked loaf.

Panettone is probably the most iconic Italian Christmas cake. It is instantly recognizable for its beautifully tall dome shape. Panettone is a sweet, soft, and buttery bread similar to brioche. The dough is traditionally loaded with lemon and/or orange zest, and a mix of dried and candied fruit and baked in a paper mold to give it the characteristic shape.

*If dried fruit isn’t your thing, we’ll also have chocolate chips and a variety of nuts including pistachios and hazelnuts to choose from.

Legend has it that Panettone’s origin goes back to the late 1400s… during a luxurious Christmas banquet given by the Duke of Milan, the desert they were meant to server was burnt. A kitchen apprentice called Toni, came up with a rich brioche bread filled with raisins and candied fruit. The Duke loved it, and so the tradition of 'Pane di Toni' was born and later changed to "panettone" and become a bread of luxury.

Join Lisa He for a fun evening making Kimchi Fried Rice- super umami, filled with nutrients and gut-healthy bacteria (but don’t let that fool you…it is so delicious!

Kimchi fried rice is a flavorful and comforting dish that is a staple in Korean cuisine. It's made by stir-frying cooked rice with kimchi, a traditional fermented Korean side dish made from vegetables, usually Napa cabbage and Korean radishes, seasoned with chili pepper, garlic, ginger, seaweed and other spices. Top it with a runny fried egg and the result is a dish that is tangy, rich (but not TOO rich) a TINY bit spicy, and deeply satisfying- this is what many of us consider comfort food! For this class, we'll be using bacon* (or turkey bacon) as the main protein.

Join TWO Louisiana natives-Suzy Fleming Leonard (retired food and dining editor at FLORIDA TODAY) and Ann Maloney (former recipes editor at The Washington Post in D.C) for a fragrant evening recreating the official dish of Louisiana: Gumbo!

In this class, you’ll learn how to make a chicken, sausage and okra gumbo. Master this recipe, then adapt it to feature turkey, seafood or almost any leftover protein.

In this class you will:

  • Chop and prepare the Cajun Trinity of onion, bell pepper and celery

  • Create a dark brown roux from butter and flour

  • Make a zingy rémoulade dressing for a crisp green salad

  • Make your own Cajun seasoning, tailored to your personal taste

While the gumbo flavors marry in the cooking pot, we’ll give a brief tutorial on the ABCs of roux, from a blond roux that adds flavor and heft to classic Cajun étouffée to the dangerously dark roux adds a depth and mystery to your gumbo.

We will also teach you a little history of gumbo, the differences between various gumbos and how to customize the dish to your liking. Whether you’re looking for a delicious way to use up leftover Thanksgiving turkey or you need to feed a crowd, gumbo is the perfect dish to warm up a cool fall day. There’s a reason this is the official dish of Louisiana.

This class is perfect for date night or girls’ night out. Your work will be rewarded with dinner of gumbo, green salad and crusty French bread and of course a FABulous Dessert!

Plan your own gathering for the next day, or freeze your gumbo for delicious, ready-to-eat suppers at home. You’ll leave the FAB kitchen with plenty to savor, and gumbo is always better the next day.

This is a perfect Date Night/Friend’s Night Out class, so you are welcome to BYOB (please drink responsibly.) We recommend an off-dry Riesling, Chenin Blanc, Gewurztraminer or Pinot Gris. (Though we also recommend you don’t open the bottle until your roux is made.)
