  • A deliciously light sponge cake flavored with a hint of champagne

    • leveled and torted and filled with a

  • Boozy (or not) Peach Compote, fresh raspberries and a light champagne meringue filling

    • covered in a

  • delicious Peach Bellini Meringue Frosting

    • and topped with

  • Glazed peaches and raspberries

You’ll learn how to decorate the side of your cake to look like an actual peach too!

Come along and learn how to make traditional Jaffa cakes. Known as ‘biscuits’ in the UK and Ireland and called ‘cookies’ in the United States, these treats are a bit of a conundrum as they are neither. They do, however, have a layer of sponge cake topped with sweet orange jelly and finished off with sumptuous chocolate. These little disks of sunshine are hard to resist so we recommend installing a safe in your pantry before attending this class. As you’re making all the components from scratch, you can customize your cake by adding in some orange zest and jazz up your jelly with a bit of Cointreau for a boozy kick too!

Ever had a Mexican Mudslide Cocktail? If not, think boozy Mexican Hot Chocolate meets a creamy milkshake- Chocolate, Kahlua, Amaretto, Cinnamon, and a few other spices to bring the heat all blended together with creamy vanilla ice cream.  Well, Angela was left unattended the other day and decided to turn the cocktail into a cake...and then decided to have a bit of fun with the decorations. You'll make a delectable, Mexican Hot Chocolate Spiced* Cake, a Kahlua and Amaretto infused Chocolate Pudding Filling and a Spiced* Chocolate Buttercream (you can even add some more booze here if you like.)

*Spices can be adjusted to suit your tastes. Non-alchocolic options also available in place of the Kahlua and

Once your cake is cooled, filled and crumb coated, you’ll create and paint your sugar skulls and learn to create a striped pattern and some festive piping around the side of your cake.

Join one of our newest instructors, Mary Cotoia for a fun and festive evening learning to recreate Ciambelle al Vino and Vin Brulé!

This ancient Ciambelle recipe originated outside of Rome in the region of Lazio. Wine makers in the region used the wine being processed or whatever was left over in the vats for this rustic peasant recipe. These biscuits are a staple in Italian bakeries and in households in Rome and the Lazio region and are found in Italian bakeries around the world. They make a great dunking cookie for coffee or tea. However, if you are ever in Rome, you must do as the Romans do and respect their traditions. To enjoy them properly, you must soak them in wine, to the point of dipping your fingers!

So, given the season you’ll also make a batch of Vin Brulé (Italian Mulled Wine) to take home and enjoy with your Ciambelle whenever you like. During class you’ll get to nibble Mary’s Ciambelle and sip her Vin Brulé so you can bring home all of your delicious goodies! Best of all, these biscuits last ages so they are perfect for gift giving too!

This is a traditional Italian recipe for wine cookies: tasty, original (with a few tweeks) and affordable for everyone. With these cookies you can pamper and surprise your guests. So let's see how to make these simple "ciambelle al vino" that taste of Italian tradition and antiquity. Cambelle means round, or ring, which is the traditional shape of these biscuits, but Mary will teach you to make twists and knots as well.

Mary prefers a richer taste and opts for a traditional sweet red wine to which she adds a secret ingredient, but you’ll have the option to use either a red or white wine to create your biscuits.

Come along to this TWO PART class as Angela McEllin teaches you how to make the Traditional Boozy Irish Holiday Fruit Cake. You can choose to make 1 large or 3 smaller fruit cakes (perfect if you’re coming as a duo- you can rock paper scissors for the extra cake!)

If you have never had Irish Fruit Cake before, you are in for a real treat. We generally start soaking the dried fruit in advance (anything from a couple of weeks to several months - or even years if you’re really dedicated!) Then we bake the cakes and spend the next few weeks ‘feeding’ (read boozing) the cakes with whatever spirit you prefer- generally whiskey or brandy or Angela’s favorite- Jamaican Rum. Once the cake is nice and drunk (sozzled) it’s ready to be covered and decorated. Delicious on it’s own or served with brandy butter, custard or chantilly cream, you can’t go wrong eating fruit cake; we even know someone that loves to lightly toast it, spread a little orange marmalade and a slice of sharp Irish Cheddar on top and then pop it under the broiler until the cheese is nice and bubbly. You’ll have more than enough cake to experiment with your favorite way of serving and still be able to share it with your friends and family! Once covered, boozy fruit cake can literally last years- look up the 106 year old piece found in Antartica if you don’t believe me!

During the first class you will make and bake your cake and while it’s baking you’ll make homemade marzipan (to cover your cake after it’s been sozzled for a few weeks) and create some decorations to adorn your completed cake. Traditionally Irish Fruit Cakes are covered in a thin layer of marzipan and then frosted using royal icing, but you can choose to make homemade marshmallow fondant instead.

Once your cakes are baked you’ll go home with them and enough booze to sozzle them for the next few weeks- all part of the fun! Then you’ll come back for part two where we’ll cover our cakes with marzipan and either royal icing or homemade fondant and then decorate our cakes ready for the holidays. Plus, you’ll get to nibble your way through Angela’s cake while you work. If you’ve never made Boozy Fruit Cake before, this is the class for you!

*Non Boozy option also available- we soak the fruit (and feed the baked cake) in Irish Tea with a selection of holiday spices. For the Boozy option, you can choose fruit that’s been steeped in either Irish Whiskey, Brandy or Jamaican Rum.

Join Keri in learning how to up your pumpkin pie game this year. First, you’ll learn how to make a flaky Gingerbread Pie Crust. While the dough is chilling, you’ll be provided some dough to work with in class. You’ll learn how to roll out your crust to fit your pie tin and make some decorative fall leaves. While your pie shell chills and your leaves bake you’ll learn how to make your Bourbon Pumpkin Custard. After we briefly blind bake your crusts, you’ll fill them with the custard and send them for the final bake. While your delicious pies bake Keri will show you how to finish your pie by teaching you how to hand paint on your pie crust leaves and brûlée the top. She will also demo how to make a yummy Maple Chantilly Cream to serve with the pie (just so you can sample her ready made pie of course).

There’s no need to be intimidated by bread rolls! Just in time for Thanksgiving, in this hands-on class, you’ll learn the basics of making delicious fresh bread rolls at home. We’ll demystify yeast, flours, flavors and show you simple kneading and shaping techniques that are easily adaptable for different types of doughs. You’ll make traditional round dinner rolls as well as garlic knots - you can even top your rolls with sesame seeds, poppy seeds, sunflower seeds or go retro with either a floury top or melted butter….mmmmm, butter!

Join Pastry Chef Keri Cossette for a sweet afternoon making Fluffy Brioche Donuts filled with a creamy Vanilla Bean Custard and dipped in a Hard Crack Caramel to give the Creme Brûlèe effect!

You’ll start by making a delicious Vanilla Bean Custard and while that’s cooling, Keri will show you how shape some ready- made dough and cut out your heart- shaped donuts. Then, you’ll each bring up a donut to the teacher’s station to learn how to properly fry them off (great photo/video opportunity for Dynamic Duos!) Once you’re back to your stations, grab your donuts* and fill with custard ready for dipping!

Now, the - not-really-hard-part- Keri will guide you though making a Hard Crack Caramel Dipping Sauce and you’ll get to dip your filled donuts and create insta-worthy beauties. You can go au natural, add a little pop of color to your sauce and decorate with sprinkles or a bit of Edible Gold Leaf for an added bit of luxury!

Plus, you’ll make a batch of rich, fluffy brioche dough to bring home and have more donuts for tomorrow…or the next day…or freeze the dough for a quick treat whenever you feel the need for a little bit of lovin’ from the oven- (or fryer in this case, but that doesn’t roll off the tongue so easily!)

Join Angela McEllin for an enchanting afternoon making and decorating these spectacular Dragon’s Lair Hot Chocolate Bombs! You’ll learn to make, decorate and fill handmade hot chocolate bombs (and a treasure chest!) and then choose from a variety of delicious fillings* to delight your little monsters with this Halloween!

You’ll also learn how to use modeling chocolate in molds and use decorator’s tools, an airbrush and edible luster dusts to add mystical elements to embellish your designs. In the interest of time, we’ll have the small and large egg shells already made and ready to fill and decorate. You’ll make the treasure chest and the full size hot chocolate bomb shells.

You’ll go home with your masterpieces (six full size hot chocolate bombs, three large eggs, three small eggs and a treasure chest) full instructions, all the recipes and TWO chocolate molds- one for the treasure chest and one three piece mold for making the hot chocolate bombs.

You won’t have to travel to the domain of the Brothers Grimm to enjoy all the deliciousness of the Schwarzwälder Kirschtorte (Black Forest Cherry Gateau.) You’ll create:

  • A Black Magic sponge cake brushed with Kirschwasser (Cherry Schnapps or Cherry Juice Reduction if you prefer to go booze free)

    • leveled and torted and filled with a

  • Boozy (or not) dark Morello Cherry Compote and

    • covered in a a light Kirsch infused Chantilly Cream filling

  • delicious Callebaut Dark Chocolate Shards

    • and topped with

  • Chocolate dipped fresh cherries

You’ll learn how to create the chocolate ‘Bark’ or shards to adorn the side of your cake to resemble the Black Forrest, too!

Join Chef Cecilia for an Asian inspired evening making two Filipino favorites- Pancit and Lumpia!

Appetizer: Lumpia is the Filipino version of the egg roll- vegetable and meat filled delicacies wrapped in a crepe-like rice or flour wrapper that is then coated with an egg wash before cooking. Chef Cecilia will talk you through all the flavor options as you create and roll your little bundles of yum!

Entree: Pancit is a traditional filipino noodle dish made with noodles, vegetables and meat. and much like other stir-fries, you could use just about any combo that you like. You’ll make Chef Cecilia’s favorite version in class but leave with a host of ideas to make this dish your own at home!

Although we normally have our brunch classes on a Sunday, we had a special request for a Saturday Brunch class this go around, so here we are! Join Angela and Rory McEllin for a fun morning making the most decadent Crème Brûlée French Toast… made with thick slices of Angela’s Brioche Bread soaked in a delicious, slightly boozy (or not, the choice is yours) custard,cooked to a golden brown and finished with a crackly Brûléed sugar crust. You’ll also learn to make a Cinnamon, Brown Sugar Maple Syrup just in case the bruleed sugar isn’t sweet enough for you. Join Chef Keri in learning how to make another fun date night dish! Carne Asada Tacos with ALL the fixings. In this class you'll learn how to make and cook off your own corn tortillas for the perfect taco night. First you'll marinate your steak in a delicious blend of spices. Then you will make your Corn Masa and let it rest for a bit. While everything is resting and marinating you'll learn how to make a quick fresh salsa (as spicy as you would like) and a delicious guacamole to put on top of your tacos. Then let the fun begin as you'll learn how to flatten your Masa dough to make the best homemade corn tortillas (you won't want to buy the store bought ones anymore) Keri will then teach you how to grill off your steak and show you how to finish off your tacos for that perfect bite! We’ll also have a selection of accoutrements including Cotija Cheese (a traditional Mexican crumbling cheese) and fresh veggies to top your tacos!
