During this hands-on class, you'll prepare 8 mini Lava Cakes to take home ready to be popped in the oven to reheat at a moment's notice. While your cakes bake, you’ll also create a batch of Vanilla Bean Semifreddo to take home and enjoy with your little beauties. Plus, Mary will demonstrate how to make a batch of the perfect tart accompaniment Raspberry Coulis!

Pane di Pasqua is a traditional Italian Easter bread. This slightly sweet and puffy bread is braided into a simple ring decorated with dyed eggs. This bread will be a beautiful showstopper on your Easter table.
You can make this recipe into six smaller bread loaves, or divide the loaf in half and make two larger loaves. Twisting the dough into a ring-shape allows it to nestle six colorful eggs that you dye yourself in your colors of choice, making you feel like a kid again.
Multicolored sprinkles are optional but they add a fun and colorful twist to this traditional bread.

For a Mexican inspired brunch, Brian takes a Mexican street food favorite and turns it into a waffle. Sweet yellow corn, crumbly tangy queso fresco and fresh jalapeños are mixed into a slightly sweet waffle. These savory waffles are then topped with an egg cooked to your preference, and then drizzled with your freshly made roasted salsa verde, more cheese, more cilantro, more corn and maybe avocado (if they are ripe).
You’ll start the class by making a roasted salsa verde which consists of tomatillos, jalapeños, onions, garlic, limes and cilantro. The level of spiciness is up to you-if you like it spicy, leave the seeds and ribs in your jalapeños, if not, take them out. You’ll then move on to making our waffle batter, again adjusting the level of spiciness to your liking. After the veggies come out of the oven, we’ll blend up our salsa ingredients, cook our waffles and bring all the elements together to create a fun and (possibly) spicy brunch dish.
Who knows there might even be a Mexican inspired mimosa to enjoy with our Mexican Street Corn Waffles.

As it’s Mother’s Day we’re throwing an Afternoon Tea Party with all Mum’s favorites. Join Rory and Angela McEllin as we recreate some of the most delicious treats your Mum really wants to nibble on.
We’ll start by creating a batch of Mini Profiteroles (Choux buns) filled with a delicious Vanilla Bean* Semifreddo and topped with a luxurious Chocolate Sauce. While your choux are baking, you’ll create Finger Sandwiches with a variety of fillings. Join our One Day Camp making Homemade Pasta from scratch, delicious Focaccia and a fresh Tomato Sauce. To begin you will make the dough for your focaccia and put it aside too proof. Next, you’ll make tender, fresh egg pasta dough from scratch and while your dough is resting you will learn to make fresh flavorful butter tomato sauce using cherry tomatoes, fresh garlic and dried herbs finished off with fresh basil. We will start off the day making our Panna Cotta and Fresh Berry Coulis (almond cookie crunch will be provided but recipe will be given) then students will make Ciabatta dough for rolls. Once the bread dough is made we’ll will begin work on our lunch- making Semolina Pasta Dough (to be used twice during class once for lunch and again later for hand cut noodles) while the dough is resting they will begin chopping veggies and preparing the Minestrone Soup. While the soup is simmering on the stove they will shape the pasta for minestrone. After lunch is eaten they will shape ciabatta rolls and second proof. Then students will begin working on Baked Ricotta Gnuderi making the dough and sauce and assembling to be baked later at home or frozen for another time. Finally ciabatta will be baked and you’ll finish by rolling and hand cutting noodles and learning how to assemble the classic Cacio Pepe Sauce.

Chicken Breasts: Boneless, skinless chicken breasts are typically pounded thin to ensure even cooking and tenderness.

So many of you have requested this class after you've enjoyed Brian's Focaccia Pizza for lunch at one of our full day classes, we've finally picked a date! We'll have a batch of dough ready for you and Brian will teach you how to make the dough (you'll go home with your own batch of dough so you can make more focaccia pizza's over the coming days.) While your dough is resting, Brian will teach you his signature sauce (the one he's been perfecting for the last couple of years) and the secret technique he uses when baking the pizzas to get that rich depth of flavor. Once your sauce is ready, you'll have a smörgåsbord of toppings to choose from to customize your pizzas. Whip up a Hearty Frittata with Mushrooms, Ricotta, Spinach and Mozzarella
When Suzy Fleming Leonard was a child, she knew she was in for a treat when her mother pulled out her mixing bowl, rolling pin and a pound of breakfast sausage. Within the hour, a pan of satisfying sausage rolls would come out of the oven.
The savory sausage with just a hint of spice, wrapped in flaky biscuit dough and drizzled with maple syrup was ideal for a leisurely breakfast.
The class will start with turning ground pork (or turkey) into breakfast sausage flavored to suit your taste — spicy, mild or sweet. Next, make the flaky biscuit dough, fill it and roll it with the sausage into two dozen savory sausage rolls. (They freeze beautifully.) While the sausage rolls bake, whip together a hearty frittata enriched with creamy ricotta and mozzarella. Add a side of fresh fruit for a Southern Brunch that’s perfect for warming a chilly January day.
As with all our Brunch Classes, we’ll have Mimosas, Fresh Fruit and Orange Juice to accompany your feast.

Appetizer: Lumpia is the Filipino version of the egg roll- vegetable and meat filled delicacies wrapped in a crepe-like rice or flour wrapper that is then coated with an egg wash before cooking. Chef Cecilia will talk you through all the flavor options as you create and roll your little bundles of yum!
Entree: Filipino Chicken Adobo is the national dish of the Philippines and may well become your new favorite Asian chicken dish as Chef Cecilia shows you how to make juicy, tender chicken coated in a sweet savory glaze with little pops of heat.

Sweet & Savory Mini Pies
A private event for a fun evening making (and eating!) sweet and savory mini pies. You'll start by making your sweet filling (your choice of apple or cherry...with a myriad of other add ins like nuts, booze soaked dried fruit, marzipan...the list goes on!) and while that's cooling you'll make Rory's oh so versatile pie dough. As your dough rests, you'll make your savory filling (again, your choice of Chicken Pot Pie or Vegetable Pot Pie.) Finally, you'll learn the secrets to successfully creating a selection of double crust mini pies with lids that don't shrink! During the class we'll bake off a couple of your pies for dinner (and dessert) and you'll take all the rest home with you- ready to freeze and bake whenever the mood takes you. This is a great introduction to easy meal prep and the recipes are so flexible you can experiment and customize every batch you make at home!

We’ll start the class by making a batch of dough for our Crusty Bread Bowls, and while the dough is rising, we’ll move on to preparing our ingredients for the Hearty Beef Bourguignon followed by a delicious, Seasonal Fruit Crisp for dessert.
Beef Bourguignon is such a wonderful dish with tender, fall apart chunks of beef simmered in a rich, red wine gravy flavored with a selection of fresh herbs and vegetables. The bread bowl recipe can be adapted to smaller dinner rolls or even baked in a loaf pan. And finally, the Fruit Crisp recipe is so versatile and quick you’ll want to use it all year ‘round!

Join Rory McEllin for an entertaining evening making Cornish Pasties. You’ll start by making your flaky pastry dough and while that’s chilling, you’ll prepare your fillings. Plus, you’ll receive alternative recipes to try at home!
Your will cut up your beef to the correct size and season, then Rory will have you chopping like a pro as you prepare the remaining ingredients for your filling.
Once they’re all prepared Rory will show you how to roll, fill and shape your pasties ready for baking or freezing. He may even break out our Amish pie maker if you want to make some mini pasties- perfect for little hands!
