Join Brian Knowles - yes our very own Brian! for a fun afternoon making two varieties of Brioche Twists- you can choose from a selection of sweet and savory options. Our classic one is the Lemon & White Chocolate variety, but you can mix it up with Orange & Dark Chocolate, Maple Pecan (soooo good!), Chocolate Hazelnut Nutella or go savory with Asiago, Garlic & Rosemary or Sun Dried Tomato & Basil spice it up with a Parmesan & Cayenne mix…we have loads of herbs to choose from- your imagination is the only limit!

These sweet (or savory), buttery Brioche Twists mixed with your choice of fillings that will slightly melt in the twists as they bake, will become your new favorite. They are delicious fresh out of the oven, but top the twists with a complimentary Sweet Glaze or for the savory options choose to brush with Garlic Butter, and you will have a new favorite flavor combination!

We will show you how to make these perfect for breakfast, brunch or afternoon treats to share with friends and family. You’ll bake a batch here, plus, you’ll leave with enough dough to make more light and fluffy Brioche Twists at home!

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Plus, you’ll receive several recipes for using up your discard!

While we’re waiting for all our recipes to rise, you'll begin your starter or 'Mother' and learn the importance of feeding and watering to nurture your starter. You'll also make a ‘stiff starter’ using our house starter to take home with you—perfect for making those gorgeous artisan loaves.

During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.

We’ll start the morning creating the stunning, tender Sourdough Marble Rye (with or without caraway seeds) in your choice of designs (Traditional Marble or Zebra Marble) with a batch of dough that’s been prepared for you.

There’s no need to be intimidated by bread! In this hands-on 101 class, Mary Storey will teach you the basics of making delicious fresh bread at home. She’ll demystify yeast, flours, flavors and show you simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking Mary will teach you to make a compound herb butter too!

You’ll learn three different shaping techniques (loaves, rolls and braids) and bring home TWO fresh baked loaves, compound herb butter as well as a batch of dough to bake at home. Best of all, you’ll get to sample your teacher’s bread and take home your still warm loaves to share with family and friends.

Polvorón de Chocolate, a decadent variation infused with the rich flavors of cocoa powder. Polvorón de Boda, also known as the Mexican wedding cookie. With its roots tracing back to the Russian tea cookie, this delicate butter cookie infused with toasted walnuts and lemon zest symbolizes purity and celebration. There’s no need to be intimidated by bread! In this hands-on 101 class, Mary Storey will teach you the basics of making delicious fresh bread at home. She’ll demystify yeast, flours, flavors and show you simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking Mary will teach you to make a compound herb butter too!

You’ll learn three different shaping techniques (loaves, rolls and braids) and bring home TWO fresh baked loaves, compound herb butter as well as a batch of dough to bake at home. Join Guest Chef Alex Peña, a California native, a former Marine, a passionate Master Baker, trained culinary chef, and a professional bread scientist for his final masterclass (for this visit, anyway!) - Rosca de Reyes. Chef Alex is our FABulous Guest Chef all the way from California for 4 full days teaching a different masterclass each day, so don’t delay…these classes will sell out quickly!

Rosca de Reyes is a sweet bread that has deep roots in Spanish symbolism and is traditionally enjoyed on January 6th during the epiphany. Learn to make this "king’s crown", including mastering the exciting decorating process of sugar paste and candied fruits that symbolize jewels. Plus, the surprise in this recipe is the baby figurine hidden within the dough, only to be discovered by the person who has the honor to host a tamaleada (tamale party), on February 2nd (Candleman’s Day).

Students will learn about the significance behind the Rosca de Reyes and its decorations. They will be taught about the techniques and can take three roscas home. While the yeast raised dough rises, the students will make Coricos de Maiz, a traditional corn cookie native to the state of Sinaloa, Mexico.

The students will take home a variety of celebratory pan dulce to share with friends and family.

Pan de Muerto, is a fragrant sweet bread that has deep roots to ancient Aztec rituals and Spanish symbolism. Because of its fragrant qualities, the bread is said to serve as one of many ways to call on passed friends and loved ones; it is the centerpiece on many altars during the Day of the Dead. The multi-day holiday, known in Latin America as El Di´a de los Muertos is celebrated on November 1st and 2nd.

Pan de Muerto, meaning bread of the dead in Spanish, is made up using a sweet dough. The buttery dough contains orange peel and additional Agua de Azahar (orange blossom water). The breads are typically made up to represent a tomb or in some cases a corpse; our focus will be the tombs. Tumbas represent the bones and skull of the deceased loved one.
Students will learn about the process and techniques behind Tumbas (tombs), made in different sizes and using different decorating techniques. During the fermentation stage of the yeast-raised dough, students will learn how to make Polvorones de Naranja (orange flavored butter cookies). An easy cookie recipe with deep Moorish roots and flavored with orange peel.

The students will take home two iconic recipes, and a few boxes of sweet breads and pastries that can be enjoyed with loved ones. A great way to celebrate life all year long.
