Come along and learn how to make and decorate a selection of Chocolate Biscuit Cake Christmas Puds with Rory McEllin. Apparently, this was the Queen’s favorite cake, but if that doesn’t convince you- it was THE most popular cake flavor I made in Ireland for years!
In addition to a few secret ingredients, it contains dark and milk chocolate, biscuits (cookies in the US), a selection of sweets and you can even add booze infused dried fruit and nuts! They’re so rich you only need a little bit to satisfy even the biggest sweet tooth. The recipe makes 6 mini puds and several mini gift tins so you have lots of options for gift giving!
We use only the best chocolate and other ingredients to make these delightful treats and you can customize your flavors to suit your own personal taste. During class you'll get to enjoy a taste or two of your instructor’s chocolaty goodies and you get to bring home all the treats you make to share with your friends and family!

Join one of our newest instructors, Mary Cotoia for a fun and festive evening learning to recreate Ciambelle al Vino and Vin Brulé!
This ancient Ciambelle recipe originated outside of Rome in the region of Lazio. Wine makers in the region used the wine being processed or whatever was left over in the vats for this rustic peasant recipe. These biscuits are a staple in Italian bakeries and in households in Rome and the Lazio region and are found in Italian bakeries around the world. They make a great dunking cookie for coffee or tea. However, if you are ever in Rome, you must do as the Romans do and respect their traditions. To enjoy them properly, you must soak them in wine, to the point of dipping your fingers!
So, given the season you’ll also make a batch of Vin Brulé (Italian Mulled Wine) to take home and enjoy with your Ciambelle whenever you like. During class you’ll get to nibble Mary’s Ciambelle and sip her Vin Brulé so you can bring home all of your delicious goodies! Best of all, these biscuits last ages so they are perfect for gift giving too!
This is a traditional Italian recipe for wine cookies: tasty, original (with a few tweeks) and affordable for everyone. With these cookies you can pamper and surprise your guests. So let's see how to make these simple "ciambelle al vino" that taste of Italian tradition and antiquity. Cambelle means round, or ring, which is the traditional shape of these biscuits, but Mary will teach you to make twists and knots as well.
Mary prefers a richer taste and opts for a traditional sweet red wine to which she adds a secret ingredient, but you’ll have the option to use either a red or white wine to create your biscuits.

Join Mary Storey for a fragrant evening reminiscent of days spent lining the piazza waiting for the St. Joseph’s Day procession. Even if you don’t celebrate St. Joseph’s Day, you’ll want to come along and learn to make these delicious Italian Pastries stuffed with TWO types of filings- the traditional Orange Blossom (or orange if you’re not into florals) Crema Pasticcera and a Cannoli-like Chocolate Ricotta Filling.
Boozy Coquito Bread Pudding
Silky smooth coconut, cinnamon and rum beverage with just the right sweetness, Coquito is a Puerto Rican tradition during the holidays - it’s like egg nog but better (Chef Keri thinks so anyway!)
Coquito Bread Pudding is a spin on both the beverage and the comforting dessert combining both of them for a match made in holiday heaven. Homemade bread cubes soaked in Coquito infused custard studded with toasted coconut chips & white chocolate. You will learn how to make the bread (loaves will be provided because day old bread is best for soaking up all the delicious custard) you’ll also learn how to make Coquito and finally, Keri will show you how to serve this scrumptious dessert. Best of all, Keri will share her delicious pudding along with a tipple of Coquito while your masterpieces are in the oven!

In this hands-on class, you'll learn to temper chocolate (we use the good stuff- Callebaut Belgian Coverture Chocolate!) and make and decorate 12 of these spooky Halloween treats. They are super festive and a delicious touch to your next party.
Class fee includes a set of silicone molds (and popsicle sticks!) to make more at home. Molds can be difficult to find online, so we're giving you the ones you'll be using in class to take home!
