Also known as Parisian Flan, these amazing delicacies are composed of a flaky pastry crust filled with a luscious amount of creamy and rich Vanilla Custard (creme patisserie) that boasts a gorgeous bronze sheen after baking.

To fill or not to fill? That isn’t really even a question you need to consider because you’ll also learn to make a scrumptious Cherry Compote. Now, the real question is whether to make your compote boozy or not!

*There is some debate as to the actual origins of these delicious pastries…some say they were created by a Danish Pastry Chef and was first served on the occasion of a state visit by the French emperor Napoleon. Others claim the pastry was first created by an Italian chef in Naples who named it "napoletano" after his city, and the name was later corrupted to "napoleon" in English. Did you know the first written record of Napoleon Pastries is in an English Cookbook written by a French Chef in 1733, but the first mention in a French Cookbook wasn’t until 1749…hmmmm!?! The plot thickens.

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!

Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Some prior baking experience is required for this course. If your camper has attended one of our previous summer camps, they should be skilled enough to attend, but if you are in doubt, please email info@fabbaker.com before booking.

  • French Macarons with TWO fillings: Chocolate Ganache and Italian Meringue Buttercream both of which can be flavored to offer a variety of options. Macarons are one of the most sought after pastry items and have a reputation as being difficult…but not if you know the secrets!

  • Pastry Shop Cake- four layers of cake and a myriad of buttercream and drip options to choose from (Pictured are the Cookies and Cream Black and White Cake with Chocolate Ganache Drip, S’mores Explosion Cake and Opps! Ice Cream Cake but you can go fruity, spicy, nutty…the choice is yours!)

  • Brioch à Tête, la Floraison, l’ étoile and rebondissements: Think elegant, rich, brioche dough filled with a selection of Sweet and Savory fillings and shaped in a myriad of designs. Flavors to choose from include mixed berry jam, chocolate hazelnut crunch, lemon and raspberry cream cheese, herbed cheese, basil pesto…the list goes on!   

  • Pâte à Choux Pastry: Eclairs, Cream Puffs and Profiteroles- Fill your sweet eclairs and profiteroles with your choice of cream patisserie flavors and your savory puffs with either Chicken alla King, Creamy Wild Mushroom, Smoked Salmon and Cream Cheese and chives or choose from dozens of other savory options…best of all, you’ll go home with all the recipes so you can show off your cooking and baking prowess.

  • Cream Tarts- These delicious tarts are a cross between cake, a cookie and a (fruit, caramel or chocolate) cream filled pastry. Tarts can be topped with a selection of handmade chocolates, French Macarons, mini Profiteroles, fresh fruit and beautiful buttercream or ganache flowers. You can choose from dozens of flavors for your tart layers and hundreds of flavors for your fillings.

    Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.

    Suitable for ages 12 and older - no exceptions. Flour, NUTS, Eggs and Dairy are used during this camp. If your child has any food allergies, food intolerances or aversions, please contact us before signing up.

Buzz on over and learn to make these delightful ‘Bee My Honey’ Entremets. Filled with layers of Lemon Mousse and Blackberry & Honey Gelleé sitting atop a Coconut Sable Biscuit Base and encased in Callebaut White Chocolate, these entremets are unlike any you’ve had before…Angela actually created this flavor combination from scratch (well, to scratch a craving itch really, but still, they are simply divine!) You’ll start by creating your Blackberry & Honey Gelleé*, and while that is setting, you’ll make and bake the Coconut Sable Biscuit Base and create your Callebaut White Chocolate cases. Next, we’ll make and decorate the adorable Bee decorations from white modeling chocolate. Finally, we’ll make the Lemon Mousse and assemble the entremets. This spectacular dessert consists of a circle of puff pastry at its base with a ring of pâte à choux piped on the outer edge and topped with smaller choux in the form of baked profiteroles that are dipped in caramelized sugar and attached side by side on top of the circle of the pâte à choux. You will fill your base with the traditional crème chiboust and finish with whipped cream using a special St. Honoré piping tip…don’t worry, Mary will teach you how to pipe the lovely design.

Learn to make delicate French Macarons with Mary Storey of Mary Storey Confections. You'll take home a selection of flavors to share with your family and friends. All ingredients, packaging, and lunch are included in the class fee.

This class is suitable for the following Dynamic Duo types:

YES: Parent/Grandparent & Child (this is a full-day class, so we recommend it for older children or younger ones that are really interested in baking.)

YES: Couples (live in the same household)

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

*What is a Dynamic Duo? It’s basically two people sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day.

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.

This is a full-day class, please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F. 

To comply with CDC guidelines, all participants are required to wear a face mask (provided) or face shield during class.

Bakewell Tart

Come along to this hands on class and learn to bake this most English of confections consisting of a shortcrust pastry shell beneath layers of handmade jam, sweet almond flavored frangipane custard, and a topping of flaked almonds. It is a variant of the Bakewell pudding, closely associated with the town of Bakewell in Derbyshire.

While your tarts are baking, participants learn to make Chantilly cream and will get to sample this delicious pastry with, of course, a cup of tea or coffee. The perfect combination!
