Join Mary Storey for a fun class making Choux Pastry, Creme Patisserie in your choice of flavors and White Chocolate Confectioner’s Glaze (in your choice of colors.) Plus, you’ll learn how to marble, dip and pipe your eclairs to achieve a variety of cool effects with the glaze and create adorable edible sea themed decorations to finish off your sweet treats!

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!

Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Some prior baking experience is required for this course. If your camper has attended one of our previous summer camps, they should be skilled enough to attend, but if you are in doubt, please email info@fabbaker.com before booking.

  • French Macarons with TWO fillings: Chocolate Ganache and Italian Meringue Buttercream both of which can be flavored to offer a variety of options. Macarons are one of the most sought after pastry items and have a reputation as being difficult…but not if you know the secrets!

  • Pastry Shop Cake- four layers of cake and a myriad of buttercream and drip options to choose from (Pictured are the Cookies and Cream Black and White Cake with Chocolate Ganache Drip, S’mores Explosion Cake and Opps! Ice Cream Cake but you can go fruity, spicy, nutty…the choice is yours!)

  • Brioch à Tête, la Floraison, l’ étoile and rebondissements: Think elegant, rich, brioche dough filled with a selection of Sweet and Savory fillings and shaped in a myriad of designs. Flavors to choose from include mixed berry jam, chocolate hazelnut crunch, lemon and raspberry cream cheese, herbed cheese, basil pesto…the list goes on!   

  • Pâte à Choux Pastry: Eclairs, Cream Puffs and Profiteroles- Fill your sweet eclairs and profiteroles with your choice of cream patisserie flavors and your savory puffs with either Chicken alla King, Creamy Wild Mushroom, Smoked Salmon and Cream Cheese and chives or choose from dozens of other savory options…best of all, you’ll go home with all the recipes so you can show off your cooking and baking prowess.

  • Cream Tarts- These delicious tarts are a cross between cake, a cookie and a (fruit, caramel or chocolate) cream filled pastry. Tarts can be topped with a selection of handmade chocolates, French Macarons, mini Profiteroles, fresh fruit and beautiful buttercream or ganache flowers. You can choose from dozens of flavors for your tart layers and hundreds of flavors for your fillings.

    Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.

    Suitable for ages 12 and older - no exceptions. Flour, NUTS, Eggs and Dairy are used during this camp. If your child has any food allergies, food intolerances or aversions, please contact us before signing up.

Buzz on over and learn to make these delightful ‘Bee My Honey’ Entremets. Filled with layers of Lemon Mousse and Blackberry & Honey Gelleé sitting atop a Coconut Sable Biscuit Base and encased in Callebaut White Chocolate, these entremets are unlike any you’ve had before…Angela actually created this flavor combination from scratch (well, to scratch a craving itch really, but still, they are simply divine!) You’ll start by creating your Blackberry & Honey Gelleé*, and while that is setting, you’ll make and bake the Coconut Sable Biscuit Base and create your Callebaut White Chocolate cases. Others claim the pastry was first created by an Italian chef in Naples who named it "napoletano" after his city, and the name was later corrupted to "napoleon" in English. Did you know the first written record of Napoleon Pastries is in an English Cookbook written by a French Chef in 1733, but the first mention in a French Cookbook wasn’t until 1749…hmmmm!?! This spectacular dessert consists of a circle of puff pastry at its base with a ring of pâte à choux piped on the outer edge and topped with smaller choux in the form of baked profiteroles that are dipped in caramelized sugar and attached side by side on top of the circle of the pâte à choux. You will fill your base with the traditional crème chiboust and finish with whipped cream using a special St. Honoré piping tip…don’t worry, Mary will teach you how to pipe the lovely design.

It is a variant of the Bakewell pudding, closely associated with the town of Bakewell in Derbyshire.

Neapolitan Mousse Cake with a Brownie Bottom is five layers of deliciousness. Come learn to make silky smooth chocolate, raspberry and vanilla bean mousse atop a decadent brownie base dripping in rich chocolate ganache and covered in chocolate-dipped strawberries and fresh berries.

You’ll also learn to make a fruit glaze so your berries will glisten. After lunch (included) you’ll get to sample the instructor’s cake and take your masterpiece home for friends and family to ooh and ahh over.

This class is suitable for the following Dynamic Duo types:

YES: Parent/Grandparent & Child (This is a full-day class, so not suitable for very young children.)

YES: Couples (live in the same household)

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

*What is a Dynamic Duo? It’s basically two people sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day.

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!

Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
