Ready to up your charcuterie game? In this class, Chef Cecilia will offer step-by-step techniques and walk you through the process of designing TWO visually pleasing -if a little spooky-boards- one sweet and one savory while sharing her best tips and tricks for carving and shaping fruit, vegetables, cheese and a selection of meats.
Step 1: Meats
Meats are usually one of the largest components on the board, so start there. Play up the variety by offering at least two to three different types of meats. Chef Cecilia will show you how to create roses and other shapes to compliment your Halloween/Dia de los Muertos theme.
Step 2: Cheeses
Next, start filling in the board with cheeses. Pick out two to three different kinds of cheeses with varying flavors, colors and textures. Think Brie, Cheddar, Spicy Pepper-jack, Smoked Gouda…you get the picture.
Step 3: Accoutrements
Now it's time to add the extras that help you build the perfect bite: Sweet & Salty, Chocolate, Dips, Jellies & Spreads- think dried fruit, olives, salty or spicy chips/dips/pretzels, sweet or pepper jellies, chocolate covered nuts/pomegranate seeds/espresso beans.., the choice is endless!
Step 4: Crispy Canvas
Finally, fill in any remaining blanks with crackers, breads, or vegetables. This is the foundation upon which you custom-build each delicious mouthful.
Step 5: Getting Fancy
Plus, as it’s almost Halloween, you’ll create some chocolate dipped Pretzel Wands/Witches Fingers and chocolate covered marshmallow ghosts and ghouls! Other decorative elements like chocolate spiders and mice that are safe to eat and a few food safe decorations add a little fright to your board.
And, just in case you were wondering charcuterie is pronounced "shahr-ku-tuh-ree."
As you can BYOB, this is a perfect Date Night/ Friend’s Night Out class- although we cant guarantee you’ll be able to pronounce Charcuterie by the end of it! (We reming you to please drink responsibly.)
This class is suitable for the following Dynamic Duo* types:
YES: Parent/Grandparent & Child
YES: Couples (live in the same household)
YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)
*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day (in this case you can each take home a board.) Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!
We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging too!
Please wear comfortable shoes (stools will be provided) and have long hair tied back. For the comfort of all our students and staff, we ask that you refrain from wearing strong perfume or cologne. You may wish to bring a cardigan or sweater as the kitchen is kept at 68F.
