Brigadeiros Three Ways
Chocolate Brigaderios
15g/ 1 tablespoon butter
392g/ 1 x 14 oz can sweetened condensed milk
30g/¼ cup Dutch Process Cocoa Powder
1 cup chocolate sprinkles (we use Callebaut)
In a pot over low heat, melt the butter, condensed milk, and cocoa powder, stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.
Pour onto a greased plate, then chill for 1 hour.
With buttered hands, shape and roll the chilled mixture into balls.
Roll the balls in chocolate sprinkles.
White Chocolate Brigaderios
15g/ 1 Tablespoon butter
392/ 1 x 14 oz can sweetened condensed milk
1/4 teaspoon salt
90g1/2 cup good quality white chocolate (we use Callebaut)
1 cup white chocolate shavings/lightly toasted shredded coconut/finely chopped toasted nuts
In a pot over low heat, melt the butter, condensed milk, salt and white chocolate, stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.
Pour onto a greased plate, then chill for 1 hour.
With buttered hands, shape and roll the chilled mixture into balls.
Roll the balls in topping of your choice.
Dulce de Leche Brigaderios
15g/ 1 Tablespoon butter
392/ 1 x 14 oz can sweetened condensed milk
1/4 teaspoon salt
150g/ 1/2 cup Dulce de Leche
1 cup sugar crystals mixed with 2 tablespoons cinnamon
In a pot over low heat, melt the butter, condensed milk, salt and Dulce de Leche, stirring continuously until you can see the bottom of the pot for 5 seconds when dragging a spatula through.
Pour onto a greased plate, then chill for 1 hour.
Shape and roll the chilled mixture into balls.
Roll the balls in cinnamon/sugar mixture.
